>Healthy Deal of the Week: Green Cabbage
This week I'm paying tribute to my Irish heritage. St. Patrick's Day is next week so you know what that means...corned beef and cabbage! Green cabbage is on sale at Publix for 0.24 cents/lb. That's a really good deal. Cabbage is part of the cruciferous family of vegetables that includes broccoli, brussels sprouts, kale, and collards. These veggies are known for their powerful antioxidants and cancer-fighting compounds. Cabbage is especially high in vitamins K and C and a good source of fiber, folate, and other great nutrients. In other words, cabbage is definitely a nutritional winner!
Try to purchase whole cabbage that does not look damaged and store it in a plastic bag in the crisper section of your fridge; it should keep for up to 2 weeks this way. Cabbage can be sauteed with other veggies, enjoyed as a garnish on sandwiches, in coleslaw, or boiled.
