Sweet potatoes are on sale this week at Publix for .39 cents/lb, that's a savings of up to.60 cents/lb!! High in beta-carotene, vitamin c, fiber, and a host of other vitamins and minerals, these veggies are extremely versatile. They're sweet and tasty so no need to add loads of butter or sour cream. You can simply bake them and add some cinnamon, mash them, slice them, or make baked french fries. Freeze leftover fries, slices, or mashed potatoes. You can also puree cooked sweet potatoes with some water and use it as a fat replacer in your favorite brownie recipe. Start with replacing 3/4 of the oil with pureed sweet potato and check the batter for consistency. An easy and economical way to add some nutrition to a delicious treat!
