Self-Care

As a nutritionist and intuitive eating counselor, people often ask me what it means to be an intuitive eater. My reply is often followed up with “you mean I can eat anything I want?” Well the answer is, yes! I don’t believe in telling people what not/to eat; the decision is ultimately up to you. A large piece of learning to be an intuitive eater is self care. Are you taking care of yourself physically, spiritually or mentally? People with eating issues are often lacking in this area and it shows up in their desire to over or under-eat all or certain foods. This is where the nutrition part blends with intuitive eating. Part of taking care of yourself means including nutrient dense foods in your diet as often as possible, choosing colorful produce, beans, whole grains and of course chocolate (or whatever fun food you enjoy). Incorporating regular movement (Exercise) is a key element to feeling alive and energized.

So yes, intuitive eaters choose what they want, based on their own needs & desires, not a diet book or anyone else (including a dietitian) telling them what to eat. My wish is that we all realize how important it is to take care of ourselves, especially during the holiday season. Remember - taking care of yourself does not mean depriving yourself.

“Fat Tax” Really?

Yup! Denmark has enacted a tax on products such as butter and oil as a way to help curb poor eating habits for their citizens. With this new tax, the price of a hamburger will go up about $0.15 and butter $0.40. I believe there are people in our great country who think this might be a good idea for Americans too. Well, I have a lot to say about that. First, how are they going to set limits on which foods would be taxed? Certain oils provide valuable nutrients and contain a mix of fats, how would those be judged? What about my beloved avocado? The Denmark tax is limited to saturated fat, but what about some new research suggesting that saturated fat may not be the culprit for heart disease after all? Second and most importantly, I don’t believe in diets in part because real change needs to come from within; this is clearly another external mechanism dictating what we should/should not eat. Let’s shift our focus to make sure we address “how” and “why” we are eating. We cannot change only “what” we eat and expect a healthy outcome. Once we remove labels from food, i.e., “good,” “bad,” etc. and give ourselves unconditional permission to eat, real transformation can begin. Oh yeah, and throw out the scale!

Coconut Water: Whats in your water?

During the summer months, we hear a lot about hydration. Over the last few years, coconut water has gained in popularity. Take a stroll through your local grocery store and you will see several different brands of coconut water all promoting health and hydration. But are they really? One claim of coconut water is….the electrolyte content is higher than most sport drinks.

 

If you actually read the nutrition label, many do not have the same amount of SODIUM as a sport drink (Gatorade). Sodium is a critical electrolyte that must be replaced after vigorous activity. Loss of too much water from our bodies results in dehydration which in extreme cases can be deadly. Sodium helps to retain some of the water that our bodies need. With fall sports gearing up, and temps rising……my advice to all athletes and others who tend to loose a lot of sodium through sweat is to choose a drink that will replace all the electrolytes lost.

New Beginnings

A new school year is a great opportunity for new beginnings in the kitchen! It’s a great time to start introducing some variety and some new family traditions. One tradition I highly recommend is the family meal. Sitting down and sharing food and conversation is one of our oldest forms of socializing. Try looking at your family schedule and find a few times a week that you can squeeze in a family meal. Remember, it’s not all or nothing, every effort counts.

We all know that breakfast is important, but morning time is usually super busy for families. Try batch cooking on the weekend. Make some French toast, waffles or berry pancakes and freeze. Then all you have to do is pop them in the toaster in the morning. Add some fruit and you have a yummy (and inexpensive) breakfast! I like to make my French toast using Ezekiel bread; it’s yummy, holds the egg mixture well, and is packed with great nutrients.

Tired of PB&J? Try using almond, soy or sunflower seed butter. Or, try using bento box for school lunches. These are great because they allow you to pack a variety of foods into one lunch. If you’re introducing something new to your child, you might want to make sure there are some old favs in there as well. Remember, repeated exposure (like 15-20 times) is key when introducing new foods.

Practice gratitude and cherish these special moments with your family. Last but certainly not least, relax and have fun…it’s just food!

Meatless Monday and Roasted Romas

Holy Hot….August is here! Looking around the garden on Meatless Monday….

  • Few Blackberries malingering….
  • Romas have been awesome, but are starting to poop out…
  • Look at these guys tho…new Beans are up…Limas, green, and fordhook to renew nitrogen where tomatoes were. Oh, and for eating too!…
  • Wanted to save this better bush tomato plant, but he just might not make it.
  • Jalapenos are lovin’ the heat!
  • And Sprout is tending the herbs….Lots of Basil…August means planting in the Lettuce Garden.
  • With all those tomatoes and basil, I borrowed a recipe from Alton Brown over on Food Network.
  • I love this guy, such a food scientist.
  • Half the Romas and place in pans…
  • Lots of garlic and I always add a jalapeno to the mix.
  • Topped with Olive Oil, Kosher Salt, Pepper, Herbs and left in the oven for 2.5 hours….
  • Remove the skins and throw in a pot. Yes, it was messy….
  • Besides freezing some, turned some of the sauce into Lasagna….Jen’s secret add the spinach, basil and parm to the ricotta and layer it up with the sauce.
  • Best sauce ever….Hope your Monday is a good one!

Fig Day

Gave the next door neighbor some of our double-organic-heirloom-sooper- dooper tomato’s… so I guess the law of psychological reciprocity kicked in and she told me to “come pick some figs”. So I did. Big Fat Juicy figs.

Organic Goods….

I recently signed up with Palmetto Organics, a produce supplier who delivers to your doorstep. How easy is that? Pre-Fourth of July included some organic yukon gold potatoes…

…all diced up and ready to steam…I borrowed a recipe from Emily which included chopped red onion….
Some fresh sage from sprout’s garden…
and a secret ingredient…goat cheese instead of mayo. I like me some mayo but this had a nice smooth creamy texture…along w/ a little olive oil, and touch of dijon and vinegar. A little lower in fat than regular mayo me thinks…

It was even better the next day…
Next up was Red Cabbage Coleslaw with a twist…recipe suggestion from Palmetto…
…fresh red cabbage, beautiful carrot, a handful of parsley from the garden, jalapeno pepper,
and a dressing of olive oil, balsamic vinegar, a little honey and S&P.

Served with grilled corn on the cob, and a rib for the husb.
I’ve asked for more “greens” with my delivery….can’t wait to see what’s delivered today.

pull out a handful of cilantro, chop up some onion and pepper (yup, pepper from the garden) and add a dice of honey mango that I picked up from Whole Foods yesterday.


I ate my first mango about a month ago thanks to the suggestion of Jen and oh, my…
